The perfect side to your meal and the perfect dish to bring to a friend's house for a party or bbq! It may take about 10 hours to make (or check the tips on how to shorten the timing), but it's so worth it making the baked beans from scratch.
Ingredients:
about 6-8 servings
1 lb dried navy beans
2 tsp salt
1/4 tsp baking soda
8 pieces of raw bacon chopped up
1 cup diced yellow onion (small onion)
1 cup brown sugar
1 cup ketchup
2 tbsp maple syrup
2 tbsp apple cider vinegar
2 cups reserved bean fluid
Instructions:
Soak your beans in water for at least 6 hours and at most 12 hours.
Drain and wash your beans.
Add them to a pot with cold water. Add the salt and baking soda and mix until it dissolves.
Bring the pot of water to a boil on medium-high heat. Once boiling, lower the heat so the beans and water are at a simmer. Simmer for 1 hour.
After 1 hour, reserve 2 cups of the bean fluid. (If prepping this in advance, save more bean fluid as the beans will soak up the juices). Drain the beans.
Cook the bacon in a deep pan (you can start this 40 minutes in to the bean simmer time). Cook for about 10 minutes or until the bacon starts to get a little crispy.
Add in the onion and cook until they look translucent about 5-8 minutes.
Preheat your oven to 350F.
To the pan with the bacon and onion, add in the beans, bean fluid, maple syrup, brown sugar, and apple cider vinegar. Mix until fully incorporated.
Bring the mix to a boil then add everything to an oven safe dish.
Once the oven is preheated add the beans to it and cook 1 hour.
Remove the beans and mix. Place the beans back in the oven and cook an additional 30 minutes.
Once the 30 minutes is done, remove the baked beans.
Mix one last time and then you are ready to serve! Enjoy :)

Prep this the night/day before if you want. Just wait to bake the beans the day of. Reserve all of the bean fluid in case the beans soak up too much liquid overnight.
