Baked Chicken Cutlets

My grandma's recipe! If you want to make something quick and easy go for these baked chicken cutlets. They're also healthier than the frying alternative. And the best part - you won't end up smelling like chicken cutlets (if you know you know).


Ingredients:

6-8 cutlets

  • 1.5 lbs chicken breast (sliced thin)

  • 1.5 tbsps olive oil

  • 1.5 cups seasoned breadcrumbs

  • 1/4 tsp salt + extra

  • 1/4 tsp pepper + extra

  • 1/2 tsp garlic powder + extra


Instructions:

  1. Preheat your oven to 375F.

  2. Add your chicken cutlets to a bowl and season with the 1/4 tsp of salt,  1/4 tsp of pepper,  1/4 tsp of garlic powder and 1.5 tbsp olive oil.

  3. Add parchment paper to a baking pan and spray with olive oil spray (or whatever cooking spray you have).

  4. Place your breadcrumbs into a plate or container. Sprinkle some salt, pepper, and garlic powder into the breadcrumbs and mix.

  5. Take each individual piece of chicken and place into the breadcrumbs. Pat down to make sure the breadcrumbs adhere to the chicken. Flip and do the same with the other side. Add the chicken in a single layer on the pan.

  6. Bake in the oven for 15 minutes. Flip each piece of chicken then bake another 10 minutes. If you want them crispier bake 10 minutes, flip them, then bake another 10 minutes. Put the oven on high broil and cook about 2 minutes each side. Keep an eye on it though so you don't burn them. Remove and enjoy :)


Tips

  • Instead of using only olive oil: use pesto, chimichurri, hot sauce, soy sauce, harissa paste or any other ingredients you think would make a good marinade.

  • Add other seasonings to your salt, pepper, and garlic powder. Add chili, cayenne and paprika for some spice, ranch seasoning or barbecue seasoning. Get creative.

  • Use these as meal prep for the week. Add a veggie, pasta, or salad along with it. Use for sandwiches as well.

  • Get 2 pieces ciabatta bread or a roll, smear my pesto on the bread, add the chicken cutlet, fresh mozzarella, and my red roasted peppers for a delicious sandwich :)

Baked Chicken Cutlets are a healthy meal that can be seasoned and paired so many different ways, doesn't require much cooking, and can be done within 30 minutes.
