Beef Barley Soup

For most of my life the only time I heard or saw the word barley was when I misspelled barely and my phone would autocorrect it to this delicious and nutritious grain that I had never heard of and didn't really think existed. Then, one day my boyfriend asked me to make him beef barley soup and I was like ok I guess we are finally trying this thing. To my surprise, it was actually really amazing and made a perfect meal for a cold day!


Ingredients:

about 6-7 servings

  • 2 lbs boneless beef chuck cut into cubes

  • extra virgin olive oil

  • 2 carrots peeled and diced

  • 1 sweet onion minced

  • 5 cloves of fresh garlic minced

  • 2 celery stalks diced

  • 8 cups chicken or beef stock/broth

  • 4 cups water

  • 1 tsp dried thyme

  • 4 bay leaves

  • 1.5 cups barley

  • Salt

  • Pepper

  • Garlic powder


Instructions:

  1. Heat about 3 tbsp of olive oil in a large pot (use at least a 6 quart pot). Make sure to cover the entire bottom of the pan with the oil.

  2. Add the meat in a single layer to the pot and season with salt, pepper, and garlic powder to taste. A little less than 1/8 tsp of each per batch/side. You may have to do 2 batches of this depending on your pot.

  3. After 2 minutes, flip the pieces of meat and season again. You will want to continue this process until each side of the meat is seared and all are done.

  4. Remove the meat and place in a bowl or on a plate on the side.

  5. Add a drizzle of olive oil to the pot if it seems dry, followed by the diced onion and minced garlic. Cook for 3 minutes.

  6. Add in the celery and carrots and cook 5 minutes.

  7. Add the meat back in followed by the beef stock (or whatever you use), water, bay leaves, and thyme.

  8. Give everything a good mix to get it all fully incorporated.

  9. Bring the soup to a boil on high heat. Once boiling, place the heat on low, cover the pot with a lid, and let the soup simmer for 30 minutes.

  10. Once the 30 minutes pass, add the barley in and cover the pot again with the lid. Cook for 1 hour.

  11. Taste to see if the seasonings are good. If not add in salt, pepper, and garlic powder to taste. I'd suggest starting with a sprinkle of each then tasting and see how much more is needed. Then, enjoy :)


Tips

  • Make this for your guests. It's easy, nutritious, and super homey. They'll definitely love it.

  • If you don't like barley (can't find it or don't have it) you can omit it or just use a pasta like pastina, ditallini, orzo, or whatever you like. Can even do quinoa or couscous as well.

  • Make your own stock or broth. Follow my recipe, but use beef bones instead of chicken.
