The most perfect appetizer to add to your spread or even for dinner! These Taquitos are loved by many and are the perfect food to make and freeze for whenever you want.
Ingredients:
Makes ~ 30 Taquitos
2 lbs chicken breast
12 oz of whipped cream cheese
1/2 cup of salsa
1/2 cup plain Greek yogurt
16 oz of shredded white cheddar cheese
2 cups of chopped spinach
1/2 tsp of cumin
1/2 tsp chili powder
1/2 tsp salt + some for chicken
1/4 tsp black pepper + some for chicken
Garlic Powder for chicken
1 cup chicken broth or 1 cup of pickled onion or jalapeño juice
20-30 Soft Taco Size Flour Tortillas
Optional: Avocado Crema Dipping Sauce *makes ~ 2 cups*
2 ripe avocados
3/4 cup of plain Greek yogurt or sour cream
2 cloves of minced garlic
1.5 tbsp of fresh chopped cilantro
1.5 small limes juiced (~1/4 cup)
salt & pepper to taste
Instructions:
Preheat your oven to 375F.
Place your chicken in a deep dish pan. Add the chicken broth then sprinkle each side of the chicken with salt, pepper and garlic powder.
Cook for 15 minutes, flip the chicken, then cook another 10 minutes or until the chicken reads 165F on a thermometer.
Once cooked, let it cool 15 minutes then shred your chicken into a bowl.
Once the chicken fully cools, add the rest of the ingredients to the same bowl and mix until fully incorporated.
Scoop about 1.5 tablespoons of the mixture onto the shell and spread it out lengthwise.
Roll up them up and add to a pan that can fit in your freezer seam side down. (If placing the taquitos in multiple layers, separte each layer with a piece of parchment paper). Cover with plastic wrap, or foil, or whatever top you have.
Add to the freezer for up to 1 hour and then they are ready to cook! If you are not eating all of them right away, remove from the pan and place in an air-tight container or plastic bag.
Bake at 350F on a pan lined with parchment paper (can also spray with cooking spray prior to placement) seam side down for 20 minutes then flip and bake an additional 10-15 minutes or until desired crispiness.
If making the avocado crema wait at most 30 minutes prior to serving to mix together! Use a blender to fully combine.

Want to cut down the prep time? Use a pre-made rotisserie chicken.
Don't like chicken? Add 2 cans of beans to the mixture instead.
To make this recipe with no dairy - simply use dairy free products for the cream cheese, shredded cheese, and sour cream. Also, make sure the tortillas don't have dairy in them either.
Want to use an air fryer? Cook at 380F for 8-10 minutes.
1 batch of this will make about a half tray for a party.
If you don't like the avocado crema as a dip, opt for sour cream, salsa, guacamole, ranch, or plain Greek yogurt!
You can even just fold the tortillas over in half and make mini quesadilla or even use bigger tortillas (a tip from someone named Katie who commented on my Youtube Short).
