French Fries

One of the best foods to keep stocked in your freezer! So easy to make and costs WAY less than frozen fries at the store. To prep these you'll need about 4 and a half hours if cooking that day. If just prepping and freezing them, you'll need 3 and a half hours.


Ingredients:

  • 5 lb bag of russet potatoes


Seasonings (can do any combo you like. here are some options):

  • truffle oil, salt, pepper, garlic powder, parmigiana reggiano, parsley

  • salt, pepper, garlic powder, olive oil

  • ranch seasoning and olive oil

  • chili crunch oil and salt

  • za'atar seasoning

  • chimichurri


Instructions:

  1. Wash your potatoes.

  2. You can peel them or leave the skins on. I keep the skin on mine because it makes them extra crispy.

  3. Cut them. I have linked tutorial videos on how to cut them, but really you can cut the potatoes into any shape you like. I normally begin by slicing the potato longwise about 1/3 " thick. I then cut each of those pieces into 1/4 " thick sticks (or fries). Again, sizing can vary depending on your liking. You can also use a french fry cutter, the tiny square piece with your chopper, a crinkle cutter, or even cookie cutters if you want a different shape.

  4. After cutting them, add them to a large bowl and fill to the top with cold water. Give them a nice mix. The fries will soak for about 1 hour. This will allow starch to come off of the potatoes which will result in a crispier fry. You don't have to soak them, but I like mine crispy so I do.

  5. Once they soak for an hour, mix again and then drain the potatoes into a colander.

  6. Rinse them through and then place the potatoes on paper towels or kitchen towels. You can do this on your clean counter or on a baking pan, but make sure there is a towel beneath them. Work in layers. Place one layer of potatoes on the towel, add another towel on top, add more potatoes and repeat. Let the potatoes dry at least 30 minutes and up to 2 hours.

  7. Once you finish drying, they are ready to be cooked or can stored in the freezer. I store mine in gallon ziplock freezer bags.

  8. If cooking, you can air fry, bake, pan fry or deep fry. BE MINDFUL: depending on the fry shape and size, cooking time may vary, so keep a watchful eye on them throughout the process.

  9. For air frying: Place in a single layer in your air fryer. Cook at 380F for 8 minutes. Flip them and cook an additional 8 minutes or until desired crispiness. If making a lot, you may need to work in batches. Once each batch is done, add all of the fries back in and cook for 3 more minutes to reheat those that had been sitting. Season with whatever seasoning you'd like.

  10. For baking: Preheat oven to 425F. Spray a baking sheet lined with parchment paper with cooking spray. Add the fries and bake for 20 minutes, flip them and then bake an additional 25 minutes or until desired crispiness. Season with whatever seasoning you'd like.

  11. For pan frying: Add a sufficient amount of oil to the pan. Enough where the potatoes are submerged halfway. Add the potatoes and cook about 15-20 minutes. Make sure to mix and turn the potatoes throughout the cooking process to get all sides golden. Remove from heat and add to a plate or bowl lined with paper towels to soak up excess oil. Season with whatever seasoning you'd like.

  12. For deep frying: Whether in a stockpot or deep fryer, heat up your oil between 350F and 375F. Slowly add in the fries and cook for about 5 minutes or until they look crispy. Remove and place on a dish lined with paper towels to absorb excess oil. If you want an even crispier texture add the fries back into the oil for about 3 minutes and then remove onto a towel again. Season with whatever seasoning you'd like.


Tips

  • Pair with a steak marinated in my perfect steak marinade topped with my chimichurri sauce.

  • Keep these in your freezer for up to 6 months.

  • Get creative with different seasonings or toppings. Make french fry nachos, disco fries, cheese fries, truffle parm, cajun, whatever comes to your mind, DO IT!

  • Keep an eye on the fries while cooking because they can overcook and become hard. Depending on the thickness or shape of the fry timing can vary.
