Meal prepping doesn't have to be boring! You may have to pack a few extra containers for this one, but it's worth it. Hamburger in a Bowl has been on repeat the last few weeks in our house. It is the perfect flavor combination and will have you wanting seconds.
Ingredients:
about 7-8 servings
2.5 lb 90/10 ground beef
2 large sweet onions sliced
5 cloves of garlic minced
2 tbsp olive oil OR 1 tbsp olive oil and 2 tbsp butter + some for potatoes
1/2 tsp salt + some for potatoes
1/4 tsp pepper + some for potatoes
1/2 tsp garlic powder + some for potatoes
1/4 tsp cayenne
1/4 tsp smoked paprika
1/4 tsp paprika
1/4 tsp chili powder
1/4 tsp onion powder
1/2 tsp dried minced onion
1 tbsp dried or fresh chives
1 tbsp dried or fresh dill
1 tbsp dried or fresh parsley
2.5 lb sweet potatoes (washed, sliced, and diced)
Optional Toppings:
ketchup
mustard
ketchup + mustard mixed together at a 1 to 1 ratio
spicy mayo
ranch
hot sauce
bacon bits (if you don't add it to the protein, find how in the tips section)
lettuce
tomatoes
pickles
pickled onions
pickled jalapenos
tzatziki
hummus
Instructions:
Preheat your oven to 425F.
Prepare your sweet potatoes. Wash, peel, and dice them.
Add the potatoes to a pan with parchment paper. Add 1 tbsp olive oil, 1/8 tsp salt, 1/8 tsp black pepper , 1/4 tsp garlic powder to the potatoes. Mix them around so all sides are coated.
Place in the oven for 25 minutes. Remove and flip the potatoes then cook an additional 15 minutes or until desired crispiness.
Heat up 2 tbsp of olive oil or 1 tbsp of olive oil and 2 tbsp melted butter in a pan.
Add the sliced onions and cook for about 5 minutes. Add in the garlic and cook an additional 4 minutes.
Add in the ground beef, along with all of the seasonings. Break up the meat and cook for about 25 minutes until the meat is fully cooked through. Make sure to break apart the meat as the time goes by and to mix.
Once everything is done, you can plate it and add whatever toppings you like and enjoy :)
Tips
Want to add bacon to the meat mixture? Cook the bacon in the pan you will be using before adding the oil and butter. Once the bacon is crispy remove it onto a plate lined with paper towels. Use the excess bacon grease in the pan to cook the onions and garlic. You won't need to use the oil and butter. When the bacon cools off, cut it into bite size pieces/bits. When the meat cooks through, add the bacon back in.
Experiment with different seasonings and toppings. You don't have to use the ones I put.
Make it a fun "interactive" dinner and have the toppings out on the counter for everyone to choose on their own.
If you don't like or want sweet potatoes, just use any other potatoes. Cut them into whatever shape or size you'd like or even buy a frozen bag of potatoes to cut down prep time.
If you don't like ground beef use other options like ground turkey, ground chicken, sausage, or even any vegan based proteins as well.
