Honey Lime Salmon

One of my favorite dishes to make that always comes out good each time! Made this one up back in the pandemic and it has been a staple in my diet ever since.


Ingredients:

~ 2-3 servings

  • 1 lb salmon

  • 2 tbsp of Olive Oil

  • 2 tbsp of red wine vinegar

  • 1 tbsp honey

  • 1/4 cup lime juice (can use lemon instead)

  • 4 cloves of fresh garlic minced

  • 1 tbsp fresh rosemary chopped

  • 3 tbsp fresh parsley chopped

  • 2 tbsp fresh basil chopped

  • 1/2 tsp salt or to taste

  • 1/2 tsp black pepper

  • 1/4 tsp garlic powder

  • (Optional) 2 tbsp of garlic herb butter


Instructions:

  1. Preheat your oven to 450F.

  2. Wash your salmon! Then, add to a pan either on parchment paper or directly on the pan with a slight drizzle of olive oil.

  3. Add the wet ingredients to the salmon then the dry and massage them in.

  4. optional add slices of the garlic herb butter to the pan

  5. Bake for 12-15 minutes or until the salmon is flakey or at your desired doneness.

  6. Plate and enjoy :)

Tips:

  • If you don't have fresh herbs, feel free to use dry.

  • Eat this with some rice and peas or any other sauteed or roasted veggie.

  • If you want to make this with pasta and need sauce - heat up half a stick of garlic herb butter and toss about 1/2 lb of pasta with 1/2 a emon and 1 cup of pasta water. You can place the salmon directly onto the pasta in your dish, cut it into bite size pieces, or shred it a little bit!

  • For an extra kick, use hot honey.


This recipe is perfect for a quick dinner or to make for a party (feast of 7 fishes too).
