Meatloaf

Meatloaf is the ultimate comfort food and if you don't agree well, that's a you thing. This meal brings me back to when I was younger. Whenever my mom used to make it my siblings and I would be so excited mostly because we knew it meant mom's famous mashed potatoes were being paired with it (I'll have to figure those out one day). She would some times suprise us and add some bacon or cheese melted in it. Any of the ways she made the meatloaf was always amazing. Especially when it's laid on a bed of creamy golden mashed potatoes and doused in some deliciously rich mushroom gravy. I know some of you eat it with ketchup ... interesting flex ... not my first choice ... but I will be eating mine with gravy. Also - you see how I call the BROWN stuff GRAVY and not the RED stuff? Yeah... let's nawt call tomato sauce gravy ever again. ANYWAY back to my gorgeous meatloaf recipe below :)


Ingredients:

~5 servings

  • 2 lbs ground beef (meatloaf mix desired, but if not get 85/10)

  • 1 medium onion finely chopped or grated

  • 4 cloves of minced garlic

  • 2 eggs at room temperature

  • 1/4 cup fresh parsley finely chopped

  • 1 cup seasoned breadcrumbs

  • 1/4 cup ketchup

  • 1 tsp Worcestshire Sauce

  • 1/4 tsp salt

  • 1/8 tsp pepper

  • 1/4 tsp garlic powder

  • dried parsley or extra for garnishing


    Optional

  • Mushroom Gravy for topping or dipping

  • or ketchup I guess .......


Instructions:

  1. Preheat your oven to 350F.

  2. Place your parsley, onion, and garlic into a mini food processor (if you have one) and chop it up very finely. If you don't have a food processor then just go to town with your knife and cutting board.

  3. Add it to your bowl with the rest of the ingredients.

  4. Mix until all of the ingredients are incorporated and then shape into a loaf and add it to a pan. I use my loaf pan and line it with parchment paper. You don't have to use parchment paper. I just do because I am afraid my loaf pan is made with toxic chemicals and don't want them dripping into my meat. Which to be honest the parchment paper probably has toxic chemicals in it too, but ya know can't be perfect! you were supposed to painfully laugh at that comment because I am half serious, but also not half serious.

  5. Prior to placing in the oven you can do this optional step: slather the top and sides with ketchup or bbq sauce for a crispier outer layer!

  6. Place it in the oven and bake for 1 hour or until the temperature inside reads 160F. THEN ENJOY ON A BED OF MASHED POTATOES WITH A NICE DOLLUP OF MUSHROOM GRAVY.


Tips

  • Prep this the morning or night before if you want to just throw it in your oven right away when you're ready!

  • If you want you can also fully cook this earlier in the day or the day before then just reheat at 350F for 20 minutes.

  • Opt for homemade ketchup! - It's so easy and so delicious (recipe coming soon).

  • Want to add some cheese to it? Before placing in the oven, cut about 8 slivers in the meatloaf and add a slice of cheese into the slivers. Highly suggest using a sharp cheddar or pepperjack. Slightly form the loaf again so the cheese doesn't seep out too much.

  • Want to add some bacon? You can either cut the raw bacon into chunks and add it to the beef mixture prior to forming or you can wrap the loaf in strips of bacon!

  • Add both the cheese and bacon for some extra love.
