Pesto

A sauce made of fresh basil, pignoli nuts, olive oil, fresh garlic, parmigiano reggiano, and salt. It's nutty, garlicky, and extremely versatile when it comes to different foods. Pesto can be used as a sandwich spread, to cook your eggs in, a pasta sauce, a dip, or even a marinade. It elevates the flavor of so many dishes. This recipe is so good, even my grandma (who's famous for her pesto recipe) loved it and wanted to know how she can make hers more like mine :)


Ingredients:

about 1 cup

  • 2 cups of fresh basil leaves

  • sprinkle of sqlt (less than 1/8 tsp)

  • 3 fresh garlic cloves

  • 1/8 cup of pignoli (pine) nuts

  • 1/2 cup grated parmigiano reggiano cheese

  • 1/4 cup olive oil


Instructions:

There's a few ways you can combine the ingredients for pesto.


Option 1: Clean the basil. Add all of the ingredients + basil to a food processor for 1 minute or until smooth.

Option 2: Clean the basil. Mince the garlic and chop the basil. Add the garlic, basil, and rest of the ingredients to a bowl and mix thoroughly.

Option 3: Clean the basil. Use a mortar and pestle to grind up the garlic, pignoli (pine) nuts, and basil. Add the rest of the ingredients leaving the olive oil to last. Slowly drizzle it in aas you use the pestle to mash it into the basil mixture.


Serve it with whatever you like and enjoy!

Pesto will always be THAT girl. Enjoy it so many ways and you'll be addicted. Here's a tip: make it in bulk and divide it into ice trays. Place in the freezer until frozen then remove and add it to a air-tight container or plastic bag. Use within 4-6 months. It can be defrosted or added to a pan to melt down.
